
Brilliant medium deep ruby color. Perfumey aromas of cassis, blackberry and ripe plums, with a hint of roasted chestnuts. Intense, rich, penetrating flavors suggesting sweet Bing cherries and chocolate, espresso coffee and dark tobacco; well-balanced and full-bodied, with classic Cabernet richness and complexity. A robust, well-built, and beautiful wine.Winemaking Notes:Merlot came in ripe, but not overripe, with an average harvest sugar of 24.9° Brix. Warm fermentation was followed by extended time on the skins, in order to encourage the formation of so-called “long-chain” or “high-molecular-weight” phenolics (the smooth kind of tannins) for a total of 15 days on the skins. The wine averaged 15 months in oak barrels, 35 percent of which were new. Of the oak employed, 86 percent was French and the balance American.Analysis:Alcohol, 14.7%; titratable acidity, 5.84 grams per liter; pH, 3.63; volatile acidity, 0.62 grams per liter; residual sugar, dry.Tasting Notes:Lovely ruby color. Hearty spicy aromas of ripe Bing cherries, black pepper, and roasted sage, with sweet vanilla and butterscotch overtones. Mouthfilling, rich in texture, with complex, classic varietal character; toasty flavors of baked fruit, dates, carob and pipe tobacco. Very ripe with a little grip and great length.
